Designed by our master artisans, the Spectre Series Paring Knife has been crafted incorporating centuries of traditional Japanese knife design along with cutting-edge nitrogen-cooled forging techniques. Featuring a perfectly balanced, ergonomic grip for incredible comfort and safety, and a shockingly sharp cutting edge. The defining characteristics of traditional Japanese kitchen knives such as toughness, sharpness, edge-life, edge-quality, precision, comfort, and ease of use have not been lost.
The Paring Knife
The diminutive, straight edge, all-purpose knife with lots of uses. It's perfect for foods that require attention to detail, like de-veining a shrimp, removing jalapeño seeds, peeling, skinning, or cutting small garnishes. Because of its size, a paring knife picks up where a chef’s knife leaves off. It's a great tool for slicing and mincing items that
are too small for an 8- to 10-inch blade, such as garlic, shallots, or
strawberries.

method, to a perfect 14° per side for clean, precise, cuts, amazing edge-retention, and they have a Rockwell Hardness of 58 for maximum strength, flexibility, and blade edge durability.

Its Pakkwood handle is also nearly impervious to heat, cold, and moisture, and has a Full Tang (which means the blade extends all the way to the end of the handle) for added strength.
