Chef's Knife

The Damascus Chef's Knife features a gentle curve from its blade’s tip to the bolster (where the handle and blade meet). Its gracefully contoured bolster keeps the fingers of your gripping hand safely away from the blade, which helps maintain a smooth back-and-forth rocking action. Its profile is especially helpful for rapid, staccato, rocking motions, and the amazingly sharp Damascus blade allows for effortless slicing, dicing, mincing, chopping vegetables, slicing meat or fish, or efficiently disjointing a whole chicken.

Blade Features

Intricately crafted from 67-Layers of AUS-10V Japanese Steel, Damascus knives produce a blade which retains its edge and sharpness better than any other. These blades are vacuum furnace heat treated and nitrogen cooled which greatly enhances the blade’s performance with the best possible wear resistance and durability, while minimizing the chance of chips occurring under heavy stress. The steel has a Rockwell Hardness (HRC) of 62+ for maximum strength, flexibility, and blade edge durability. Each blade is hand sharpened using the complex, three-stage, traditional Japanese Honbazuke method to a perfect 16-degree angle per side.

Handle Features

Damascus Dynasty Series' G10 Garolite handles are virtually unbreakable and nearly impervious to heat, cold, and moisture. They have triple rivet construction and full tang strength (meaning the steel extend all the way through the handle) for lifelong durability and safety. The ergonomic grips have triple rivet construction for added strength and stability, and are designed to excel in the harshest conditions of busy kitchens.
