Strawberry Shortcake Layer Cake from Maria of My Happy Bakes!



When we here at KESSAKU first discovered Maria of My Happy Bakes on her Instagram, we were taken by how much FUN her video reels are to watch. They’re quick and well shot with all the important moments covered, but they’re also just… wonderfully whimsical! (The Minions cupcakes, the Death Star cookie, and Bunny Buns(!) come to mind.)

We immediately contacted her to have her try our Spectre Series Bread Knife, and were thrilled when she used it to make the reel for her Strawberry Shortcake Layer Cake recipe.



Let’s first describe Maria’s recipe in three sentences:

  • 1. Fresh Strawberries (and plenty of them).
  • 2. Homemade whipped cream.
  • 3. Vanilla sponge cake with real vanilla.

Okay, now that I’ve got your attention, the great thing about her recipes is that she gives “pro tips” which are small details that together make a big difference when baking. She also talks about why each tip is important, so while most recipes just tell you to do something, she tells you WHY you’re doing it, which is interesting. Here are two examples:

*Do not use cold eggs. Use room temperature eggs - because they will whip up better.

*Chill your bowl and whisk attachment before whipping the heavy cream. This will help your whipped cream reach stiff peaks faster and provide better texture and stability.






Maria used our Spectre Series Bread Knife to cut the vanilla sponge cake into layers (One of the reasons this knife is so well suited for this is because its blade has double bevel scalloped low frequency serrations, which is a very fancy knife-talk way of saying the serrations of the blade are rounded, which helps to prevent all of the soft, sweet deliciousness from being crushed). She then went on to frost each layer, and shape and level the cake for decoration. Lastly, she used the bread knife to make nice, delicate slices for serving.

The Spectre Series Bread Knife made it so easy to cut these vanilla sponge cake rounds into 4 layers which I filled with plenty of fresh strawberries 🍓 and homemade whipped cream!

I was so impressed with the quality of their knives and with how cleanly I was able to slice through this cake. I can't wait to use them to cut all of my future cake and bread recipes!
