Boning Knife

Widely used in food preparation for easily removing the bones of poultry, meat, and fish, a boning knife is a kitchen knife featuring a sharp point, and a narrow, relatively flexible, curved blade. The amazingly sharp and finely honed blade of our professional Ronin Boning Knife allows for a single-pass cut when removing fish from its flesh, and can surgically remove the fat and meat off of bones to preserve every molecule of flavor.


The Ronin Series
Ronin Series knives are strikingly sharp, and distinguished by their finely etched design reminiscent of the classic Japanese Seigaiha pattern (waves layered from concentric circles which represent surges of good luck, resilience, and power). The vacuum furnace heat treated and nitrogen cooled blades are crafted from premium high carbon 7Cr17MoV stainless steel with a high order of chromium for enhanced corrosion resistance and tensile strength. With their Rockwell Hardness (HRC) of 58, honing and sharpening is effortless.

Adorned with two marbled resin bands reminiscent of twin moons or celestial wedding rings, Ronin Series knives come equipped with extremely durable mirror polished pakkawood handles that have high water-resisting capabilities, won't crack or split, and are easy to clean and maintain. Pakkawood is exceptionally dense and possesses incredible strength, which is why it is often used in both military and kitchen environments.

Blade Features
Ronin Series knife blades are vacuum furnace heat treated and nitrogen cooled which greatly enhances the blade’s performance, providing excellent wear resistance and durability, while minimizing the chance of chips and fractures occurring under heavy stress. Forged from premium 7Cr17MoV high carbon stainless steel, the composition of this steel results in great edge retention, keeping the knife’s blade sharper, longer. The steel has a Rockwell Hardness (HRC) of 58 for strength, flexibility, and blade edge durability. Each blade is hand sharpened using the complex, three-stage, traditional Japanese Honbazuke method to a perfect 16-degree angle per side. The blade’s elegant etched Japanese Seigaiha pattern promotes less sticking when chopping and dicing.

Handle Features
Ronin Series mirror-polished handles are made of pakkawood, which is extremely durable, and nearly impervious to heat, cold and moisture. Pakkawood is used for military applications due to its incredible strength and exceptional density. The handle has full tang strength, which means the knife’s blade extends all the way through the entire handle for lifelong durability and safety. Its seamless build ensures that no dirt or food debris can ever infiltrate its body, keeping the handle safe and hygienic in busy kitchens. Ergonomically designed for extended use, the handle has a contoured bolster, which provides a comfortable pinch grip for enhanced knife control. It’s finished with a stainless-steel laser etched end cap, which serves as a counterbalance.
